It’s a semi-hard cheese with a rich, complex flavor and a distinctive red-orange paste. Made from raw milk of the dairy's own herd of cows, the cheese is carefully crafted by hand and aged for around 5 months to allow its full flavor to develop. It is cloth-bound in a similar way to their Cheddar. The result is a cheese with a nutty, buttery taste that's perfect for pairing with crackers, fruit, and a range of other accompaniments, and is perfect staple in the kitchen, when you need to top and dish and have a mellow snack while cooking.
