Created by Marcus Fergusson at Feltham’s Farm, an organic smallholding near Templecombe in South Somerset, Renegade monk is a fascinatingly bold cheese reminiscent of a French Epoisses.

Marcus collects his milk from a local organic farm, which is then pasteurised, set into a curd and then hand washed in an organic ale every couple of days as the cheese matures. The milk is inoculated with Blue cheese cultures to make this cheese a one of a kind; A soft, blue, ale washed rind cheese. This lends to a wonderfully unique flavour, slightly more floral than other washed rinds and a pleasing sweetness to balance the pungency.

Renegade monk has won many award in its short lifetime from Gold and Silver medals at the World Cheese Awards, Gold medals at the Global Cheese Awards, and in 2020 it was crowned supreme champion at the Virtual Cheese Awards.

Sinodun Hill, or Bryn Sinodun as it is known in Welsh, is a multi-award-winning artisan goat cheese shaped by patience, animal welfare, and a deep respect for the land. Founded by Rachel Yarrow and Fraser Norton, who traded corporate careers for life on the farm, this extraordinary pyramid cheese is crafted using traditional, low-intervention techniques that let the natural character of the milk shine. Today, Rachel, Fraser, and their herd of 241 goats thrive on their farm in Carmarthenshire, Wales, where sustainable farming practices and high standards of care yield a pure, seasonal expression of Welsh terroir.

Inspired by classic French cheesemaking, Sinodun Hill relies on a slow, gentle four-day lactic set with minimal cultures and a plant-based cardoon thistle rennet. It is then aged for up to 21 days to cultivate its signature wrinkly, ivory coat, which naturally develops delicate spots of blue, grey, and green moulds over time. A beautiful cheese made from the rich and creamy milk of Jersey cows. Developed by the renowned Cheddar maker, Jamie Montgomery, this unique cheese is a fusion of Cheddar and Tomme, crafted from the herd of Jersey cows he had long raised on his farm. To enhance the taste, Bill Oglethorpe came up with a brilliant idea of washing the rind in brine, which not only retained the moisture in the cheese but also imparted meaty and savory flavors. Created by Marcus Fergusson at Feltham’s Farm, an organic smallholding near Templecombe in South Somerset, Gert Lush is the newest addition to his exiting range. A bloomy white-rinded organic cheese, Gert lush is inspired by the French camembert but with a definite West Country edge. It has a wonderful mushroominess with earthy notes similar to a Camembert, but then has a lovely balanced acidity and rich butteriness making this cheese unique from the Camembert.

Gert Lush is made with Organic Pasteurised milk, collected from a local farm daily and is suitable for Vegetarians.

Gert Lush, although a cheese in its infancy it has been incredibly well received picking up a Gold at the Artisan Cheese Awards 2022 and one star at the Great Taste Awards 2022.

Gert Lush means “very lovely” in West Country dialect.

Three generations of the Padfield family have farmed the land around Kelston Manor, near Bath, but it was Graham who rekindled the family's cheese-making tradition. He found a recipe in an old grocer's recipe book for a Bath Cheese, recommended to Lord Admiral Nelson by his father in 1801. The recipe has been passed down and refined over the years, and today, Graham and his son, Hugh, work together to bring you the best of traditional cheese-making with a modern twist.

Bath Soft Cheese is made with the milk of the family's Friesian cows, and each cheese is dry-salted by hand for a unique flavor. Tom's expertise and passion have elevated the cheese to new heights. Matured for around 12 months, this cheddar boasts a full and robust taste with a hint of tang. 

Westcombe Dairy is one of the last four traditional producers of Somerset Cheddar, with the status of PDO (Protected Designation of Origin). The Calver family follows strict criteria as defined by Ark of Taste, Slow Food, using raw milk from their own herd, traditional pint starters, and animal rennet. The cheese must never be made in block form and must be matured in cloth for at least a year. The resulting cheddars are a testament to the nearly lost tradition of artisan cheddar-making in England.

The Calver family operates two farms with 400 cows and produces unpasteurized cheddar daily, using time-honored techniques passed down through generations. Tom Calver is the latest member of the family to work in the dairy and under his leadership, the cheese has become even better. He values tradition but is not afraid to innovate, investing in a large cellar cooled by spring water and commissioning the UK's first cheese brushing and turning robot, affectionately known as "Tina the Turner".

The pork from Gothelney Farm provides the glorious pearly fat for the salami, and forms the backbone of the Whole-Muscle-Cut product range. Westcombe Dairy takes inspiration from across Europe and the surrounding Somerset landscape to create a range of products that work in harmony with their temperate climate and complement their cheeses. The local microbial terroir imparts a unique character and mold flora to their hand-made small-batch charcuterie.
